The Mediterranean Diet Starts with Real EVOO
The Mediterranean diet became a slogan the moment it left the Mediterranean. In American grocery language it often means "lemon, garlic, and a tablespoon of whatever oil was on sale." The pattern that showed up in PREDIMED and in the older Seven Countries work was more specific: vegetables, legumes, fruit, fish, modest wine in some cultures — and extra virgin olive oil as the primary fat, used generously.
Fat is the vehicle, not the enemy
A low-fat "Mediterranean" plate is a different diet. Phenolic compounds in EVOO are fat-soluble. They ride with the oil onto tomatoes, beans, and greens. The health literature is not about avoiding oil. It is about which oil, how fresh, and how often.
In traditional kitchens that means a pool in the pan and another thread on the finished dish. You cook with it and you finish with it. That is not waste. That is the diet.
Real EVOO has a personality
Green, bitter, peppery oil is the one that matches the studies. Mild, buttery, almost invisible oil is usually late-harvest, old, or refined. The Mediterranean table was never built on flavorless fat. It was built on oil that tastes like the tree.
