The oleocanthal catch
That peppery sting at the back of the throat is oleocanthal — a natural anti-inflammatory compound found in fresh, high-quality extra virgin olive oil. Researchers have compared its action to ibuprofen. If an oil never bites, it was probably harvested late, refined, or left sitting too long. Olivyra is pressed to keep that character.

Olives are cold-pressed within hours of harvest. Delay is the enemy of polyphenols, aroma, and that green, peppery finish.
