Health Benefits of High-Polyphenol EVOO: Science-Backed
"Olive oil is healthy" is true and incomplete. The studies that changed nutrition guidelines did not pour refined, late-harvest oil on toast. They used extra virgin oil with enough phenolic compounds left to do something measurable.

PREDIMED, in one paragraph
The PREDIMED trial (New England Journal of Medicine, 2013; later republished after a statistical correction) followed 7,447 adults at high cardiovascular risk. A Mediterranean pattern supplemented with extra virgin olive oil cut major cardiovascular events by about 30% versus a low-fat advice group. Later analyses pointed at phenolic content — not only oleic acid — as part of the effect. Monounsaturated fat is necessary. It is not the whole story.
The EFSA claim is specific
The European Food Safety Authority allows one olive-oil polyphenol claim: they contribute to the protection of blood lipids from oxidative stress. The condition is a daily intake of 5 mg of hydroxytyrosol and its derivatives. That is a lot of supermarket EVOO and a modest amount of a genuinely high-phenolic oil. It is also why "high polyphenol" is not a vibe. It is a lab question.
Oleocanthal and inflammation
Oleocanthal is the compound that makes fresh EVOO sting the throat. Beauchamp and colleagues showed it inhibits the same COX enzymes as ibuprofen. That does not make olive oil a painkiller. It does explain why a peppery oil is the one researchers keep using when they talk about anti-inflammatory diets. If your oil never stings, you are not getting much oleocanthal.
Hydroxytyrosol and LDL
Hydroxytyrosol is one of the most potent plant antioxidants measured. In olive oil it shows up with tyrosol and oleuropein derivatives. The EFSA wording is about protecting LDL from oxidation — an early step in atherosclerosis — not about melting plaque overnight. Dose and freshness still matter. Phenols degrade in a clear bottle on a sunny shelf.
What we can say about Olivyra
Olivyra is made as a high-polyphenol oil is made: early-harvest fruit, cold-pressed within hours, single-origin Tunisia, 0.3% acidity, USDA and ECOCERT organic. Independent lab results for this lot are pending. When they arrive, we will put them on the bottle and on this site. Until then we will not print a milligram number.
