From the olive groves of Tunisia to your kitchen.

The journey begins

Abdel, one of the founders, grew up with Tunisian extra virgin olive oil, and has family with orchards — and a small one himself. He was surprised that so few people in America had ever tasted it. After filling our suitcases each visit so we would not run out, we started this company.

Tunisia is one of the world's largest producers of olive oil, yet its oils remain largely unknown outside the Mediterranean. Hot, dry summers, mild winters, and centuries of olive-growing tradition produce oils of real character. Most of that oil still leaves the country in bulk, to be blended and sold under other labels. Olivyra is the other path: a named, single-origin bottle.

Why Tunisia?

Stress makes polyphenols. Harsh sun, heat, and limited water push the tree to protect the fruit. That is why early-harvest Tunisian extra virgin olive oil so often tastes bitter and peppery — and why it belongs in the high-polyphenol conversation.

The peppery, slightly bitter taste you notice in high-quality EVOO is not a flaw. That sting at the back of the throat is oleocanthal, a natural anti-inflammatory compound found in fresh oil. If an oil never bites, it was probably harvested late, refined, or left sitting too long.

Meet Olivyra

Olivyra is our extra virgin olive oil: one country, one oil, one harvest. No blending, no shortcuts. Cold-pressed within hours of harvest to keep aroma, polyphenols, and that green, peppery finish. USDA and ECOCERT organic. 0.3% acidity.

Independent lab results for this lot are pending. The oil is made the way high-polyphenol oils are made. Until the sheet arrives, the honest phrase is high polyphenols (lab results pending).

How we got here
